Put a thin wooden batten across the seam to cover the joint. 

You could cut and fit the foam between the rafters, use a table saw and apply a slight bevel on one or both edges so it is a pressed fit.  I have not tried to cut foam with any thing but a regular wood type circ saw, but I have heard of people cutting foam with other cutting types of blades, fiber composite or the kind for cutting metal.  A regular table saw can make a real mess.

BRad, I invented Captain Canaan when I announced the Old HOme Day parade and the theme was "saturday cartoons"  Captain America was part of some politicians float and I got that photo off his site.  Batman and Superman were in town too that day... tough day for crime in Canaan (the town I live in)

I will second that I wore a respirator when I ripped my foam on the table saw.  A hand saw works well but obviously not great if you have a lot of consistent ripping to do.  I planned my cuts so I didn't have to  rip much.  You want a continuous foam barrier over the rafters anyway.

Peter,  What are you using for rafters and how far apart are they?  COuld you push the prepainted sheetrock up between the rafters and hold it in place with a few screws (mudding a screw head or two in the middle of a panel is not like painting the whole thing in place) and then run some trim boards around the edges to hide the gaps?

On  the foam between the rafters, yes absolutely at least 1.5" on the outside.  It is in addition, after the fact, one could fill the bay in with additional insulation.  I would be concerned with the heat of Summer as much as the cold of Winter.
