Beet salad

Karen came up with an interesting dish today. She drizzled fresh beets with olive oil and roasted them. Then she cut them up and mixed with sweet onion, feta cheese, orange juice and raspberry balsamic vinegar. Went really well with chicken and fresh carrots. Mmmm.

I need to try beets, one of those things you get in your mind you don't like without ever trying them.
