I'm thinking about opening a cooperage.  I would like to start air drying some staves and I was wondering how thick I should be cutting them.  I know that this will be a long learning process but I have to start somewhere.  I've scoured the web and found very little information on the topic.  Any information would be greatly appreciated.

I sell to the resident cooper at the Strawberry banke in Portsmouth NH
He has been very happy with the 1" oak I cut for him, I saw it using the accuset set to cut 1 1/16 and I have dialed in the blade thickness.  He has ordered 5/4 for beer barrels
