The local outlets are boiling crawfish and have lines waiting for this delicacy.

Even the newspaper joined in this week with a front page publication.

Delicacy? I thought they were a staple :D. We love mud bugs. I think we have gone through 3 sacks so far. After Easter the price will go down, and many more will perish.

Not Crawfish but Pat and I went with a small group to Middendorf's for lunch today.

My plate was "Stuffed Broiled Whole Flounder".  I was stuffed when I made it around that plate.  :o   food6

Today was our 15th Annual Crawfish Boil.  Pat and I have only missed one and that was due to our 50th wedding anniversary trip.

A basket of boiled crawfish is ready to be emptied.

A hatch is opened at the bottom of the basket for emptying.

Pat's "flat" is being filled.

Ready to enjoy.

Love them cridders.  Have a friend in Missouri that makes them real tasty.  Anyway to get some up here that are fresh?  He tells me you can order them fresh and have them overnighted.

More Crawfish yesterday for a Granddaughter's Birthday Party.

Crawfish are purchased in sacks.

And they are nicknamed "Mudbugs" for a reason.  They live and grow on the bottom so they have to be washed.

The water is boiling and well seasoned and the crawfish are ready for dunking.

The crawfish boil for 5 minutes then the corn, potatoes, mushrooms, beans, asparagus, etc. are added and let soak for 30 minutes.

We have those up here in the small rocky streams.

I don't think anyone here eats them, but they are there.

It would take a while to gather up a batch as big as that pic.   ;D

I tried some crayfish once up here that was for sale at Walmart.  They tasted just like the crick smelled.  I'm thinking you guys down south season the heck outta the water, right?  Or is the muddy, swampy taste something you like?

Yes spicy, but proper prep is the key to good crawfish.  They are harder to peel but much tastier than any shrimp that I have ever eaten.   food6
