This was my first attempt at beer batter .They turned out perfect! I think the secret is to flour the fish first.This was only 2 walleye.

What's the recipe?

Wish I could get some fresh walleye! I may try while in Michigan. Any suggestions close to Jeffs?
Funny I live on the gulf of mexico with all the fresh seafood I can get and crave Walleye.

When I was stationed in Alaska, we caught and ate a lot of breaded Flounder and Halibut!

We used a ready-mix boxed product called "Crust Eze" (spelling might be wrong).

We would put some of the mix in a large bowl and add just enough beer to make the mixture soupy enough to not have dry spots, and thick enough to stick to the diced up fish.

We cut the fish into approx. 1 inch cubes.

We would set the bowl in the kitchen sink with a liberal amount of crushed ice for the bowl to be partially submerged in.

Helps to keep the mix ready for more fish.

Roll the cubes of fish in the mix until covered, then drop several of them, one at a time into the deep fryer, when they float to the top, they're done.

One trick I found when doing the fish is not to cut it into pieces but to pull it apart. You wind up with thick and thin strips and when cooked, the thin strips become crispy and make for a much tastier chunk of fish. I have used the Crusteze formula with beer before and it works great, but any pancake mix will also work as well. I just add a tablespoon of "Tony's" to the dry mix before adding the beer to give it some kick.

only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

The recipe is very simple : 1 cup all purpose flour ,3 tablespoons cornstarch, 1 teaspoon salt, 1/2 teaspoon paprika, 1 cup beer, 1 tablespoon vegetable oil . Mix dry ingredients first then add beer and oil.
I used lime beer which gave it a nice added flavor,and I used a little more than a cup because it seemed a bit thick at first. Also if you shake the fish in flour the batter sticks better.
