Spicy Cucumbers

Yes, it's summer and the cukes are comin' as fast as we can eat them.  Luckily, my famlly loves them.

We have settled on a spicy cucumber recipe that we love.  It's sweet with a very nice tang.  Give this a try.....


1 cup Rice vinegar
1/4 cup sugar
2 teaspoons of Kosher salt
1/4 teaspoons of crushed red pepper flakes (like you sprinkle on pizza)

Heat all the above gently in a small saucepan with occasional stirring, making sure all the sugar and salt are absorbed.  No nerd to boil.  Take off the heat and let it cool to room temperature, often hastened by pouring into a bowl.

Slice up a bunch of cucumbers.  Skin on / skin off is your choice.

Once the seasoning broth is cool, pour over the sliced cukes and refrigerate.  A summer treat that's a notch above.

Sadly, I believe that we picked our last one tonight.  That is a shame because I want to try that recipe.

Mine are just starting. Kinda late,but not selling,so no big deal to try to get them in early.

only have a few chain saws I'm not suppose to use, but will at times, one dog Dolly, pretty good dog, just not sure what for yet,  working on getting the gardening back in order, and kinda thinking on maybe a small bbq bizz,  thinking about it,

I'm gonna try that tonight, thanks Doc, I love cucumbers.  Poston and Danny, why so early and when do you normally start getting them?  Around here they'd just be setting on good and last year I picked until the first frost, this year I didn't get a thing planted  :-\.  I get sweet flame pickles from Bomgaars every once in awhile, kind of pricey but very good, pickles, peppers, onions and jalopenoes? sweet but nice heat too.

My mother used to do the cuckembers, tomatoes and sweet onion thing with an oil and vinegar dressing. Just plain white vinegar and vegetable oil. Pretty good.

I have done some using redwine vinegar and olive oil with a dash of sugar. Tasty.

Mom never ate shrimp in her life so neither did we till I was about 22. Was at a wedding and they had peel and eat shrimp. Didn't know you were supposed to peel. Crunchy boogers but pretty good. It all passed so all was well.
Give me a new saw chain and I can find you a rock in a heartbeat.

They start producing about the end of May, and by now, the heat has burned them up.  It does not matter how much water that they get.  They only produce about 8 weeks.

Thanks guys, glad YOU have that kind of heat  ;).  My first garden froze in May :D, not exactly cuke picking time, the second never got planted, it perished on my daughter's trampoline waiting to be transplanted, poor little souls. Luckily for me I have some very good friends/neighbors!

You can use zucchini instead of cukes.Zucchini makes the best sweet relish.Cukes sliced up in Italian dressing goes good,add a little sugar.

@doctorb, thanks for the great recipe.  We're enjoying them. We're just using regular apple cider vinegar.  Didn't have any rice vinegar. Thanks a bunch.

The word rice reminds me of when I was in high school and worked in a small town Kroger's grocery store. One of my fellow workers asked an Asian lady what she was going to do with all that rice, while bagging her groceries. She was apparently offended at that question, and complained to the manager. The manager asked all of us who had asked the question, but didn't get any one to admit it. We all got a week off. We never knew who did it. It wasn't me.  ;D Such is life.
