Venison pepperoni

Just finished mixing and stuffing 3 pounds of venison pepperoni.
Will rest in my beer fridge overnight and then bake tomorrow.
Would post pics if I can re figure out how.
I use the stuff in the evening with 5x sharp cheese (which I will take to florida with me for Raider Bill) when I sit in my hot tub for 30 minutes virtually every evening watching the day end and contemplating my wonderful life.

Sounds GOOD! How about sharing a recipe? I make all sorts of sausage from venison and still have not found a peperoni that makes me say "Wow".  But half the fun is trying new things.
Spent a summer in Canandaigua fishing the lake (and working for the city public works dept.) while in college.
Love the finger lakes area.  Best friend grew up in Clifton Springs....

Some years ago a number of us would gather and make deer sausage which usually turned out well .

I think the biggest single expense for the occasion was the beer . :D
