Thanksgiving FOOD!!!

Paschale say hello to Emeral for me, I used to work for him at Commander's Palace a looooong time ago.
I'm gonna miss the southern Thanksgiving this year. My wife's folks are Cajuns and they put on a spread. Deep fried turkey, oyster cornbread stuffing, dirty rice with crawdads and sweet potato and pecan pie! AYYEEEEEEE!!!!!!
We decided to have dinner with only what we raised, grew or harvested.
So it's smoked lake trout appetizers, butternut squash soup, one of our free range chickens stuffed with venison sausage stuffing, roast venison loin with morel mushroom sauce, wild cranberry sauce, whipped delecota squash and mixed pole and wax beans, all followed by wild blueberry pies. The only thing we didn't produce ourselves is the butter, flour, walnuts oranges and ice cream.

Your menu sounds terrific!  I think it's very, very cool that you're cooking a meal of stuff you guys grew or gathered yourself.   8) 8) 8) 8)  That sounds like something I'd wanna do to.  The cool thing about this forum, I find there are really people of like mind, besides the obvious sawmilling side of things.   ;D

That's pretty cool that you used to work for Emeril--I'm jealous, since I'm a huge fan of his.  I'm thinking Thanksgiving at your place next year, T Framer.   ;) I'd drive to MN for the wild morel sauce and the roasted venison!   8)

Very fat, of course I was fat before yesterday :D

Now Lutefisk is a dish that once resembled a fish (poor cod) when it is caught is cleaned and salted heavily in fact packed and covered in it. Then about seventy years later it is reconstituted in lye where the poor cod grows to six times it's original size however it has the consistency of thin Jello at any point it seems as thought it will melt into a puddle of fish pudding! I think that the Norwegians who are addicted to the stuff are in it simply for the two pounds of butter that accompanies each serving.  

Paschale It was fun working for Emeril even though it was only for about six weeks. He left Commanders to open the first "Emeril's" and Jammie Shannon came on to take his place. It is debated as to who is the greater chef however in the flamboyant category Emeril excels!

Oh yes I'll see what Brigette thinks about having the FF gang up the TG next year, it's not like she ain't used to the sawdust by now! ;D

Paschale.....you made pumpkin brulee?  Pumpkin Brulee?
I would cry with joy if someone made pumpkin brulee at my house!  More than anything else...that really impresses me!  
My family's tradition is a little different because both of my sons are married and the girls parents really insisted they eat there, so rather than shift the kids through two different dinners, I make Thanksgiving Breakfast.  
Sausage gravy and biscuits with homefries, grits,
waffles, eggs, bacon, sausage, and a pecan pumpkin coffee cake.  
Cowboy Bob and I are having the Turkey with the trimmings on Sunday.  Then we'll have turkey tettrazini, turkey salad sandwiches and turkey turkey the rest of the week!

Paschale asking for folk's menus from the south has been great. My latest passion has been trying new styles of cooking. TF creole has been the latest, I'm trying to locate the ingredients and make a great gumbo. I gave my sons this link for a cookbook I'm asking for X-mas.

Gosh thank you, Paschale!!  I'll make the Brulee today so Cowboy Bob and I can have it with our "Thanksgiving" Turkey tomorrow!!

We had TG dinner at church last sunday,  TG dinner at Mom's thursday,  the Kids and parents will all be here tonight for TG dinner 8)  Hope Joey doesn't burn his old pants cause I may need them. ::)

The dinner at church was real was really good.  The food fas good,  but I really enjoyed the experiences.  One old lady hasn't been to church for a couple of years due to health problems.  She showed up to church sunday in a wheel chair and with one of those shoulder strap oxygen tanks.  She announced that she was making remarkable recovery.  Everyone cheered for her 8)  We weren't fully aware of how remarkable her recovery was until after service when we got in the food line.  We let her in first.  She shoved her wheelchair aside,  dumped her O2 tank in it,  and proced to heap her plate full :o :o ;D

Then there was 'Old Bob"  he always walks out of church at five minutes till 12.  While eating at a little cafe after church one time,  we discovered why Bob needs to leave church early-------he's got a table full of old sisters that he has sunday dinner with.

Well last sunday,  Bob stayed for the full sermon (and the dinner).  Guess who's showed up for dinner :D :D :D  Bob and the girls had a good time.

My wife thinks I sometimes get fullfillment from church for the wrong reasons and that I need to pay more attention to the sermons------maybe that's so :-/

The preacher once remarked after service that he hoped he didn't offend me with his remark about old bald guys.  I told him I didn't even notice it and that he would have to put his offensive remarks at the beginning of his sermons if he wanted me to hear them --------before I fall asleep :D :D
