Magicman you got that all wrong you would be deep fat frying it to seal in all those good yummy juices. Eating dry pork would be like chewing on an old shoe.  :D

Good here, we had the spare ribs from the pork belly last night made on the egg. Problem was like you noticed the trim off the spares was very close so not much meat on them but very tasty. This is the first time in ages I've had decent pork.

Yes I understand about the DF frying but mine is not to question why.  :D

Looks good Norm. I have about 25 lbs of it I need to go take care of that's curing right now, plus 2 hams. Instead I'm sitting here drinking memosas with Lindy. Bad idea. I have to get this done today. Go back to work tommorow.

Just got finished bagging and tagging all of mine. No pics though. The upright fridge in the basement is slam full of pig with more in the chest freezer and more still in the freezer section of the fridge in my shop. Gonna have to buy another freezer for the steer we have to butcher when I get home next time.

We call that slab bacon up here. That looks some good. Eat a pound of that with eggs and toast and that will stay with you until well past noontime.

I can and just about have, Can't be sitting down in front of the TV all day. If a person goes outside and works,they will work it off. I'm not talking about running equipment the way you would drive a car either,just sitting pushing a few levers are not going to do it. Need something that does not have a key in it to burn off that pound of meat.  ;D  I still have rocks to dig out and rough parts to be leveled out. I forgot been in a cold spell,everything is froze now. There is always next year.

I foodsavered the bacon and froze it for use later. I took a package out before we left for Madison and Patty and I gave it a try this morning.





Two fresh eggs over easy with muffin bread to finish off with. The verdict was this was the best bacon we've had in ages. The smoke flavor which initially too much really mellowed and gave just a light hint of it. Although quite a bit of work I'd do it again.

Great minds think alike I tossed in some buckwheat pancakes and New York State Maple Syrup and I buy sides of smoked bacon from a little smokehouse in Tenn.DELISH!

My advice on aging gracefully... ride fast bikes and date faster women, drink good tequila, practice your draw daily, be honest and fair in your dealings, but suffer not fools. Eat a hearty breakfast, and remember, ALL politicians are crooks.

You guys have done it to me again, 07:40am here I just got in for breakfast from strip feeding the steers and was going to have someting lite (cereal). Think I will have to re-evaluate :D
