Oak cookies/ovals

I got this 34" wide x 80" long pin oak trunk from a tree service friend. Thinking about cutting some ovals out of it to provide some character. Is this going to be a disaster drying? Hoping to pull the trigger on a vac kiln this week, but it's going to be a bit before it's running, so just air drying for now.
What would you guys do with this log? I just think that a regular slab might end up boring?
