I cut down a dead apple tree at the request of my neighbor and since there were no lengths suitable for lumber, I sawed it into cookies. My moisture meter is a hammer electrode Protimeter and the instructions have no mention of a scale for apple. What is the nearest species to apple that would be a good substitute?

Happy birth day!!!  I would look at other fruit species based on specific gravity and use that.  you can do an oven dry estimate and corollate that with the meter.  are the pins suppose to be oriented in a certain way with the grain?

I would contact the manufacturer if you can.

Density of apple and cherry are pretty close. That's the "J" scale on my moisture meter. So, the MC is ~27%. Thanks, Doc.
