Rafter tail/sprocket question

Sorry for all the questions but the forum really is a brilliant resource and people have been so very helpful...

I had originally intended to have rafter tails continuous with rafters but as i want to insulate the building, it seems that such an arrangement would make this more complicated. Also, it might be nice to decrease pitch at the overhang. I'm aware of sprockets framed into plates and on rafters but i think attaching separate tails after insulation might be another way that could work for me.

How would you advise connecting the tail to the building. Is it best done after insulation and membrane install but before exterior sheathing install. I've seen that adding tails is an option in the search but was just hoping for a bit more detail about installing. Overhang will be about a foot at a lower pitch and will support sarking board, insulation and tiles.
