I myself would put a cast iron pan on low heat pan fry it.

That is how we cooked the hand cut side pork & bacon on the farm.

Grandma usually cut at least 3/8 off the slabs.

Bake or broil it with maple syrup and cracked pepper.

My advice on aging gracefully... ride fast bikes and date faster women, drink good tequila, practice your draw daily, be honest and fair in your dealings, but suffer not fools. Eat a hearty breakfast, and remember, ALL politicians are crooks.

This may sound crazy but I cook Thick Sliced bacon on the grill every week.  Use grilling or thicker Tin Foil and cook on low to mid heat. Regular foil will burn.  Make sure your tinfoil coverage is more than the bacon area and doesn't drip off the foil.  Also cut the package in half before taking the slices out. This way the slices aren't so long.  Flip em a few times and closing the lid in between for baking.  We store it in a ziploc bag after and nuke a few slices in the morning without greasing up the house.  I use to bake them in the oven but ruined an element doing that. I'd love to try those Steak cuts but haven't seen them in the stores here yet. Nice.
