Been fiddleheads up here, but we are done getting fresh ones for this year. Froze a bunch. Some we bought and some cousins brought in last weekend.

We like asparagus, but don't grow any. Used to.

We've had some garden parsnip. A lot were all crown, but some had a nice tap root on them. Wet year.

Coming to dinner soon: Strawberry Rhubarb pie. Picked 9 lbs yesterday from the backyard patch. Northern crop, needs cold winters to thrive so not sure how far south it grows. This is what 9 pounds looks like on a 15" plate. It freezes well.

I brought in some strawberry rhubarb to work. 
One guy mentioned he likes it kinda tart.
I brought in a piece of the old-fashioned kind for the tartness!!  :wacky:

My Father loved his parnips too.

Fry up some cabbage and onion and have with a big fat sausage.

We eat kraut once in awhile here, we don't make it, it's made 200 miles from here near Moncton, NB I believe. Source of vitamin K2 is fermented veg.

We had a southern style meal for supper tonight, but no fried squash.  We had fried bass, which was battered in corn meal, black eyed peas, corn bread, grits and watermelon.  It was a fine meal, and I was glad to be able to share it with my wife, mother, two of three daughters, all three grandchildren and a son in law.  

Afterwards, I took the little ones out to the pond to look for the baby gator that recently showed up.

Corned deer hash. Peeled and diced up 2 medium sized taters and one sweet potato with about an egg sized onion. Fried them all brown then drained and added a half pint of canned, corned deer. Seasoned with Worcestershire sauce, salt and pepper. Fast and simple to make for the 2 of us. I forgot to make the cornbread though.

We had baked salmon, fresh corn meal battered garden squash deep fried and some pickled beets.  Very nice.

We were at the Cabin so it was a NY strip and store bought stuffed taters.  We didn't really care for the taters, but on short notice it was what we had.

We do them taters with the intact skins (2-halves) of a nice russet type potato. Extra may be baked the night before with supper. Then the next night you remove the innards from the hide and mix with sour cream (or butter), bacon bits, chives and what not and rebake them. My goodness.  :thumbsup:

Extra baked potatoes become material for fried onions and potatoes.  Often when I am cooking a spatchcocked chicken I will find room on the Large Big Green Egg grate for some baking potatoes.  Both the chicken and the 'taters go about an hour at 400º.

First I'm hearing about this. Do you fry up the leftover potatoes with the onion all mixed up? Sounds good. 

I'm doing garlic scapes tonight for the first time. They're supposed to be good.

Yes, cut up the left over taters in 1/2" chunks, toss in the onions and cook in butter or olive oil. We always called it hash here when we throw some hamburg in. Brown the meat some first.
